Stewed Tomatoes

A simple and delicious side dish made with fresh tomatoes, onions, and herbs.

Ingredients

  • Fresh oregano - 1 tablespoon, chopped
  • Fresh basil - 2 tablespoons, chopped
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Fresh tomatoes - 4 large

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the tomatoes, sugar, salt, and pepper. Stir to combine.
  4. Reduce the heat to low, cover the skillet, and let the tomatoes stew for 20 minutes.
  5. Uncover the skillet and stir in the basil and oregano. Cook for an additional 10 minutes, until the tomatoes are soft and the flavors have melded together.
  6. Serve the stewed tomatoes warm, garnished with additional fresh herbs if desired.
