Chicken and Vegetable Skewers with Basil and Lemon Marinade

These flavorful chicken and vegetable skewers are marinated in a refreshing basil and lemon marinade, perfect for grilling or baking.

Ingredients

  • Skewers - 8, soaked in water
  • Salt and pepper - To taste
  • Olive oil - 1/4 cup
  • Garlic - 2 cloves, minced
  • Lemon - 1, juiced and zested
  • Basil leaves - 1/2 cup, chopped
  • Cherry tomatoes - 1 cup
  • Red onion - 1, cut into chunks
  • Bell peppers - 2, cut into chunks
  • Chicken breast - 2, boneless and skinless, cut into cubes

Instructions

  1. In a bowl, combine the chopped basil, lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper to make the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Let it marinate in the refrigerator for at least 1 hour, or overnight for best results.
  3. Preheat the grill or oven to medium-high heat.
  4. Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the soaked skewers, alternating between ingredients.
  5. Grill or bake the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
  6. Serve the chicken and vegetable skewers hot, garnished with extra basil leaves if desired.
