Ingredients

  • Salt and pepper - To taste
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Dijon mustard - 1 tablespoon
  • Walnuts - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Blue cheese - 1/2 cup, crumbled
  • Green beans - 1 pound, trimmed

Instructions

  1. Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, until crisp-tender. Drain and rinse with cold water to stop the cooking process.
  2. In a large bowl, combine the green beans, blue cheese, cherry tomatoes, red onion, and walnuts.
  3. In a small bowl, whisk together the Dijon mustard, lemon juice, olive oil, salt, and pepper to make the vinaigrette.
