This Greek chicken souvlaki is a delicious and flavorful grilled chicken dish marinated in a blend of Mediterranean spices.

Ingredients

  • Tzatziki sauce - 1/2 cup
  • Pita bread - 4
  • Cucumber - 1, sliced
  • Tomatoes - 2, sliced
  • Red onion - 1, sliced
  • Salt and pepper - To taste
  • Dried thyme - 1 teaspoon
  • Dried oregano - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 1/4 cup
  • Chicken breasts - 4, boneless and skinless

Instructions

  1. In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper to make the marinade.
  2. Cut the chicken breasts into bite-sized pieces and place them in a ziplock bag.
  3. Pour the marinade over the chicken, seal the bag, and massage the marinade into the chicken to ensure it is evenly coated.
  4. Marinate the chicken in the refrigerator for at least 1 hour, or overnight for best results.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated chicken onto skewers, alternating with slices of red onion.
  7. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  8. While the chicken is grilling, warm the pita bread on the grill for a few minutes on each side.
  9. Serve the grilled chicken souvlaki on warm pita bread, topped with sliced tomatoes, cucumbers, and a dollop of tzatziki sauce.
