Gnocchi al Gorgonzola

This creamy and flavorful Italian dish features potato gnocchi tossed in a rich gorgonzola cheese sauce.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - To taste
  • Salt - To taste
  • Parmesan cheese - 1/4 cup, grated
  • Butter - 2 tablespoons
  • Heavy cream - 1 cup
  • Gorgonzola cheese - 6 ounces, crumbled
  • Gnocchi - 1 pound

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat.
  4. Add the gorgonzola cheese and stir until melted and smooth.
  5. Pour in the heavy cream and stir until well combined.
  6. Add the cooked gnocchi to the skillet and toss to coat in the sauce.
  7. Cook for an additional 2-3 minutes, or until the sauce has thickened slightly.
  8. Season with salt and black pepper to taste.
  9. Serve the gnocchi al gorgonzola in individual bowls, garnished with grated Parmesan cheese and chopped fresh parsley.
