Gluten Free Lentil Soup

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 4 cups
  • Lentils - 1 cup, rinsed
  • Garlic - 3 cloves, minced
  • Celery - 2 stalks, diced
  • Carrot - 2 medium, diced
  • Onion - 1 medium, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrot, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
  3. Add the lentils, vegetable broth, tomato paste, cumin, paprika, salt, and pepper. Stir well to combine.
  4. Bring the soup to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
  5. Taste and adjust the seasoning if needed.
  6. Serve hot, garnished with fresh parsley.
