Ginataang Mongo

Ginataang Mongo is a Filipino dessert made with mung beans, coconut milk, and sweetened with sugar.

Ingredients

  • Saba bananas - 2, sliced
  • Glutinous rice balls (bilo - bilo) - 1 cup
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Sugar - 1/2 cup
  • Water - 2 cups
  • Coconut milk - 2 cups
  • Mung beans - 1 cup

Instructions

  1. Rinse the mung beans and place them in a pot with water. Bring to a boil and simmer until the beans are soft, about 30 minutes.
  2. Add the coconut milk, sugar, vanilla extract, and salt to the pot. Stir well and simmer for another 10 minutes.
  3. Add the glutinous rice balls and sliced saba bananas to the pot. Cook for an additional 5 minutes, or until the rice balls are cooked through.
  4. Serve hot and enjoy!
