Ginataang Mais

Ginataang Mais is a Filipino dessert made with sweet corn kernels cooked in coconut milk and sugar.

Ingredients

  • Water - 1/4 cup
  • Glutinous rice flour - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Sugar - 1/2 cup
  • Coconut milk - 1 can (400ml)
  • Sweet corn kernels - 2 cups

Instructions

  1. In a pot, combine the coconut milk, sugar, vanilla extract, and salt. Stir until the sugar is dissolved.
  2. Add the sweet corn kernels to the pot and bring to a boil.
  3. In a small bowl, mix the glutinous rice flour and water to make a slurry.
  4. Slowly pour the slurry into the pot while stirring continuously to prevent lumps.
  5. Simmer for about 10 minutes or until the mixture thickens.
  6. Remove from heat and let it cool for a few minutes before serving.
  7. Serve warm or chilled. Enjoy!
