Garlic and Zucchini Shrimp Skewers

These garlic and zucchini shrimp skewers are a delicious and healthy option for a summer barbecue.

Ingredients

  • Wooden skewers - 8
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Zucchini - 2 medium, sliced
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the minced garlic, olive oil, lemon juice, salt, and black pepper.
  3. Add the shrimp to the bowl and toss to coat them in the marinade. Let them marinate for 10 minutes.
  4. Thread the marinated shrimp and sliced zucchini onto the wooden skewers, alternating between shrimp and zucchini.
