Ingredients

  • Salt and pepper - To taste
  • Water - 1/4 cup
  • Cornstarch - 1 tablespoon
  • Green onions - 4, sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1, thinly sliced
  • Broccoli florets - 2 cups
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Honey - 1 tablespoon
  • Soy sauce - 3 tablespoons
  • Garlic - 4 cloves, minced
  • Chicken breast - 2 boneless, skinless breasts, sliced

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, and sesame oil. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the garlic and cook for 1 minute, until fragrant.
  5. Add the broccoli, carrot, and red bell pepper. Stir fry for 3-4 minutes, until the vegetables are crisp-tender.
  6. Return the chicken to the skillet and pour the soy sauce mixture over the chicken and vegetables. Stir to coat everything evenly.
  7. In a small bowl, whisk together the cornstarch and water. Add the mixture to the skillet and cook for 1-2 minutes, until the sauce has thickened.
  8. Season with salt and pepper to taste.
  9. Garnish with sliced green onions and serve hot over steamed rice or noodles.
