Mauritian Seafood Curry

This Mauritian seafood curry is a flavorful and aromatic dish made with a blend of spices, coconut milk, and a variety of seafood.

Ingredients

  • Cooked rice - For serving
  • Salt - To taste
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Coconut milk - 1 can (14 oz)
  • Tomatoes - 2, diced
  • Cayenne pepper - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Curry powder - 2 tablespoons
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Onion - 1, finely chopped
  • Coconut oil - 2 tablespoons
  • Squid - 1/2 lb, cleaned and sliced
  • Fish fillets - 1 lb, cut into chunks
  • Shrimp - 1 lb, peeled and deveined

Instructions

  1. In a large pan, heat the coconut oil over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.
  3. Add the curry powder, turmeric powder, cumin powder, coriander powder, and cayenne pepper. Stir well to coat the onions and spices.
  4. Add the diced tomatoes and cook for a few minutes until they start to soften.
  5. Pour in the coconut milk and bring the mixture to a simmer.
  6. Add the shrimp, fish fillets, and sliced squid to the pan. Stir gently to combine with the sauce.
  7. Cover the pan and let the seafood cook for about 10-15 minutes, or until cooked through.
  8. Stir in the lime juice and fresh cilantro. Season with salt to taste.
  9. Serve the Mauritian seafood curry over cooked rice.
