Fig and Almond Crusted Figs with Feta

These delicious figs are coated in a crunchy almond crust and topped with creamy feta cheese.

Ingredients

  • Fresh mint leaves - For garnish
  • Honey - 2 tablespoons
  • Feta cheese - 1/2 cup, crumbled
  • Egg - 1, beaten
  • Almonds - 1 cup, finely chopped
  • Fresh figs - 8

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut a small slit in the top of each fig, about halfway down.
  3. In a shallow bowl, combine the chopped almonds and a pinch of salt.
  4. Dip each fig into the beaten egg, then roll it in the almond mixture, pressing gently to adhere.
  5. Place the coated figs on a baking sheet lined with parchment paper.
  6. Bake for 8-10 minutes, or until the almond crust is golden brown.
  7. Remove from the oven and let cool for a few minutes.
  8. Top each fig with crumbled feta cheese and drizzle with honey.
  9. Garnish with fresh mint leaves.
  10. Serve warm and enjoy!
