Feta Wrap

This delicious feta wrap is made with fresh vegetables, tangy feta cheese, and a flavorful dressing.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Kalamata olives - 1/4 cup, pitted and sliced
  • Red onion - 1/4, thinly sliced
  • Tomato - 1, diced
  • Cucumber - 1/2, thinly sliced
  • Feta cheese - 1/2 cup, crumbled
  • Whole wheat tortillas - 2

Instructions

  1. In a small bowl, combine the lemon juice, olive oil, salt, and pepper to make the dressing.
  2. Place the tortillas on a flat surface.
  3. Divide the feta cheese, cucumber, tomato, red onion, Kalamata olives, and fresh parsley evenly between the tortillas.
  4. Drizzle the dressing over the ingredients.
  5. Fold the sides of the tortillas inward, then roll them up tightly to form wraps.
  6. Slice the wraps in half and serve.
