Fava Bean and Artichoke Salad

This refreshing salad combines fava beans, artichokes, and a tangy lemon dressing.

Ingredients

  • Salt and pepper - To taste
  • Garlic - 1 clove, minced
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Artichoke hearts - 1 cup, quartered
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes. Drain and rinse with cold water.
  2. Remove the outer skin from the fava beans by gently squeezing them. Set aside.
  3. In a large bowl, combine the fava beans, artichoke hearts, cherry tomatoes, red onion, and parsley.
  4. In a small bowl, whisk together the lemon juice, olive oil, garlic, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled and enjoy!
