Fava Bean and Shrimp Salad

This refreshing salad combines fava beans, shrimp, and a tangy lemon dressing.

Ingredients

  • Salt and pepper - To taste
  • Fresh parsley - 1/4 cup, chopped
  • Cucumber - 1, diced
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4 cup, thinly sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Shrimp - 1 pound, peeled and deveined
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 3-4 minutes, then drain and rinse with cold water. Remove the outer skins from the beans.
  2. In a large skillet, heat olive oil over medium heat. Add the shrimp and garlic, and cook until the shrimp are pink and cooked through, about 3-4 minutes. Remove from heat and set aside.
  3. In a large bowl, combine the fava beans, shrimp, red onion, cherry tomatoes, cucumber, and parsley.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve the salad chilled and enjoy!
