Fava Bean and Roasted Red Pepper Salad

This refreshing salad combines fava beans, roasted red peppers, and a tangy vinaigrette for a burst of flavors.

Ingredients

  • Salt and pepper - To taste
  • Garlic - 1 clove, minced
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Roasted red peppers - 1 cup, sliced
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 3-4 minutes, until tender. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked fava beans, roasted red peppers, red onion, and fresh parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the salad and toss to coat all the ingredients.
  5. Let the salad marinate in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
