This refreshing salad combines crisp green beans, tangy feta cheese, and a zesty lemon dressing.
Ingredients
Salt and pepper - To taste
Dijon mustard - 1 teaspoon
Extra virgin olive oil - 2 tablespoons
Lemon juice - 2 tablespoons
Fresh parsley - 2 tablespoons, chopped
Kalamata olives - 1/4 cup, pitted
Red onion - 1/4 cup, thinly sliced
Cherry tomatoes - 1 cup, halved
Feta cheese - 1/2 cup, crumbled
Green beans - 1 pound, trimmed
Instructions
Bring a pot of salted water to a boil. Add the green beans and cook until crisp-tender, about 3-4 minutes. Drain and rinse with cold water to stop the cooking process.
In a large bowl, combine the green beans, feta cheese, cherry tomatoes, red onion, Kalamata olives, and fresh parsley.
In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper.
Pour the dressing over the salad and toss to coat evenly.
