Endive and Beet Salad

This refreshing salad combines the crispness of endive with the earthy sweetness of beets.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Dried cranberries - 1/4 cup
  • Walnuts - 1/4 cup, chopped
  • Goat cheese - 1/4 cup, crumbled
  • Beets - 2 medium, roasted and sliced
  • Endive - 2 heads, separated into leaves

Instructions

  1. In a large bowl, combine the endive leaves, roasted beet slices, crumbled goat cheese, chopped walnuts, and dried cranberries.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss gently to coat.
