Ingredients

  • Salsa - For serving
  • Sour cream - For serving
  • Green onions - 2, sliced
  • Bacon - 4 slices, cooked and crumbled
  • Cheddar cheese - 1 cup, shredded
  • Eggs - 6, scrambled
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Potatoes - 4 medium, sliced into thin rounds

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Toss the potato slices in olive oil, salt, and pepper and arrange in a single layer on the baking sheet.
  3. Bake for 20 minutes, or until the potatoes are crispy and golden.
  4. While the potatoes are baking, scramble the eggs in a non-stick skillet over medium heat.
  5. Remove the potatoes from the oven and top with the scrambled eggs, shredded cheese, and crumbled bacon.
