Creamy Broccoli Soup

This creamy broccoli soup is a healthy and delicious way to enjoy the goodness of broccoli.

Ingredients

  • Salt and pepper - To taste
  • Butter - 2 tablespoons
  • Heavy cream - 1/2 cup
  • Vegetable broth - 4 cups
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Broccoli - 1 head, chopped

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the broccoli and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the broccoli is tender.
  4. Remove the pot from the heat and let it cool for a few minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Return the pot to the heat and stir in the heavy cream. Cook for a few minutes, or until heated through.
  7. Season with salt and pepper to taste.
