A creamy and flavorful broccoli soup that is perfect for a comforting meal.
Ingredients
Salt and pepper - To taste
Butter - 2 tablespoons
Heavy cream - 1 cup
Vegetable broth - 4 cups
Garlic - 2 cloves, minced
Onion - 1 medium, chopped
Broccoli - 2 heads, chopped
Instructions
In a large pot, melt the butter over medium heat.
Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
Add the chopped broccoli and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the broccoli is tender.
Using an immersion blender or regular blender, puree the soup until smooth.
Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
Simmer for an additional 5 minutes to heat through.
