Cream of Broccoli Soup

Cream of Broccoli Soup

A creamy and comforting soup made with fresh broccoli and rich cream.

Ingredients

  • Grated cheddar cheese - 1/2 cup
  • Salt and pepper - To taste
  • Heavy cream - 1 cup
  • Chicken or vegetable broth - 4 cups
  • All - purpose flour - 2 tablespoons
  • Butter - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Broccoli - 2 heads, chopped

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the chopped broccoli and cook for another 5 minutes.
  4. Sprinkle the flour over the vegetables and stir well to coat.
  5. Pour in the chicken or vegetable broth and bring to a boil.
  6. Reduce the heat and simmer for 15 minutes, or until the broccoli is tender.
  7. Using an immersion blender or regular blender, puree the soup until smooth.
  8. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
  9. Simmer for another 5 minutes to heat through.
  10. Serve hot, garnished with grated cheddar cheese.
