These fluffy cornmeal pancakes are a delicious twist on traditional pancakes. They have a slightly sweet and nutty flavor that pairs perfectly with maple syrup.

Ingredients

  • Maple syrup - For serving
  • Vegetable oil - 2 tablespoons
  • Egg - 1
  • Milk - 1 cup
  • Sugar - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 1 cup
  • Cornmeal - 1 cup

Instructions

  1. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, and vegetable oil.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  6. Repeat with the remaining batter.
  7. Serve the cornmeal pancakes warm with maple syrup.
