Blackberry Pancakes

Delicious and fluffy pancakes filled with fresh blackberries.

Ingredients

  • Maple syrup - For serving
  • Butter - For cooking
  • Fresh blackberries - 1 cup
  • Vanilla extract - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Milk - 1 cup
  • Egg - 1
  • Sugar - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 1 1/2 cups

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat the egg. Add the milk, vegetable oil, and vanilla extract. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the fresh blackberries.
  5. Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter to coat the surface.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  7. Repeat with the remaining batter.
  8. Serve the blackberry pancakes warm with maple syrup.
