Delicious and fluffy blueberry pancakes made with fresh blueberries.
Ingredients
Maple syrup - For serving
Butter - For serving
Blueberries - 1 cup
Vanilla extract - 1 teaspoon
Vegetable oil - 2 tablespoons
Milk - 1 cup
Egg - 1
Sugar - 2 tablespoons
Salt - 1/2 teaspoon
Baking powder - 2 teaspoons
All - purpose flour - 1 1/2 cups
Instructions
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate bowl, beat the egg. Add the milk, vegetable oil, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the blueberries.
Heat a non-stick skillet or griddle over medium heat. Grease with butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
Repeat with the remaining batter.
Serve the blueberry pancakes warm with butter and maple syrup.
