Coca Bread

Coca bread is a type of traditional Catalan flatbread. It's crispy, thin and perfect for sandwiches or just to enjoy with a good cheese or ham.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • All - purpose flour - 3 cups
  • Sugar - 1 teaspoon
  • Active dry yeast - 1 packet
  • Warm water - 1 cup

Instructions

  1. In a large bowl, combine the warm water, yeast, and sugar. Let it sit for 5 minutes until the yeast is foamy.
  2. Add the flour, salt, and 1 tablespoon of the olive oil to the yeast mixture. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes, until it is smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for about 1 hour, until it has doubled in size.
  5. Preheat your oven to 475°F (245°C) and place a baking stone or inverted baking sheet in the oven to heat.
  6. Punch down the dough and divide it into 4 equal pieces. Roll each piece into a thin round.
  7. Place the rounds on the preheated baking stone or baking sheet and bake for 10-15 minutes, until the bread is golden and crispy.
  8. Remove the bread from the oven and brush it with the remaining tablespoon of olive oil. Let it cool before serving.
