Chorizo and White Bean Stew

This hearty and flavorful stew combines spicy chorizo sausage with creamy white beans for a satisfying meal.

Ingredients

  • Lime - 1, juiced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chicken broth - 2 cups
  • Diced tomatoes - 1 can (14.5 ounces)
  • Canned white beans - 2 cans (15 ounces each), drained and rinsed
  • Bell pepper - 1, diced
  • Garlic - 3 cloves, minced
  • Onion - 1, chopped
  • Chorizo sausage - 1 pound, sliced

Instructions

  1. In a large pot, cook the chorizo sausage over medium heat until browned. Remove from the pot and set aside.
  2. In the same pot, add the chopped onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened, about 5 minutes.
  3. Add the drained and rinsed white beans, diced tomatoes, chicken broth, paprika, cumin, salt, and pepper to the pot. Stir to combine.
  4. Bring the stew to a boil, then reduce the heat and simmer for 30 minutes to allow the flavors to meld together.
  5. Add the cooked chorizo sausage back to the pot and simmer for an additional 5 minutes.
  6. Remove the pot from the heat and stir in the chopped cilantro and lime juice.
  7. Serve the chorizo and white bean stew hot, garnished with additional cilantro if desired.
