Pinto Bean and Ground Turkey Chili

This hearty and flavorful chili is made with pinto beans, ground turkey, and a blend of spices.

Ingredients

  • Sour cream - 1/2 cup
  • Shredded cheddar cheese - 1/2 cup
  • Fresh cilantro - 2 tablespoons, chopped
  • Chicken broth - 1 cup
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 tablespoon
  • Chili powder - 2 tablespoons
  • Tomato paste - 2 tablespoons
  • Diced tomatoes - 1 can
  • Pinto beans - 2 cans, drained and rinsed
  • Bell pepper - 1, diced
  • Garlic - 3 cloves, minced
  • Onion - 1, diced
  • Ground turkey - 1 pound
  • Olive oil - 1 tablespoon

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the ground turkey and cook until browned, breaking it up with a spoon.
  3. Add the diced onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened.
  4. Add the pinto beans, diced tomatoes, tomato paste, chili powder, cumin, paprika, salt, and pepper. Stir to combine.
  5. Pour in the chicken broth and bring the chili to a simmer. Cook for 30 minutes, stirring occasionally.
  6. Taste and adjust the seasoning if needed.
  7. Serve the chili hot, garnished with fresh cilantro, shredded cheddar cheese, and a dollop of sour cream.
