Chicken Satay

Chicken Satay

This is a traditional grilled chicken skewer dish from Southeast Asia served with a peanut sauce.

Ingredients

  • Bamboo skewers - 8
  • Coconut milk - 1/2 cup
  • Peanut butter - 1/2 cup
  • Curry powder - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Brown sugar - 1 tablespoon
  • Lemon juice - 2 tablespoons
  • Soy sauce - 1/4 cup
  • Chicken breasts - 4, boneless and skinless

Instructions

  1. Cut the chicken into thin strips and place in a bowl.
  2. In a separate bowl, mix together the soy sauce, lemon juice, brown sugar, garlic, and curry powder. Pour over the chicken and marinate for at least 1 hour.
  3. Soak the bamboo skewers in water for 30 minutes to prevent them from burning.
  4. Preheat a grill or grill pan to medium heat.
  5. Thread the chicken onto the skewers and grill for 5-7 minutes on each side, or until cooked through.
  6. While the chicken is grilling, make the peanut sauce by combining the peanut butter and coconut milk in a small saucepan. Heat over low heat, stirring constantly, until smooth and heated through.
  7. Serve the chicken satay with the peanut sauce for dipping.
