Ingredients

  • Peanuts - 1/4 cup, chopped
  • Green onions - 2, sliced
  • Vegetable oil - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Brown sugar - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Soy sauce - 1/4 cup
  • Peanut butter - 1/2 cup
  • Rice noodles - 200 grams
  • Chicken breasts - 2, cut into thin strips

Instructions

  1. Cook the rice noodles according to the package instructions, then drain and set aside.
  2. In a bowl, whisk together the peanut butter, soy sauce, lime juice, brown sugar, garlic, and red pepper flakes.
  3. Heat the vegetable oil in a pan over medium heat. Add the chicken and cook until it's no longer pink.
  4. Add the peanut sauce to the pan and stir to coat the chicken.
  5. Add the cooked noodles to the pan and toss to combine with the chicken and sauce.
  6. Serve the noodles and chicken topped with the sliced green onions and chopped peanuts.
