Cauliflower Rice Stir Fry

This healthy and flavorful cauliflower rice stir fry is packed with colorful vegetables and delicious Asian-inspired flavors.

Ingredients

  • Salt and pepper - To taste
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Sesame oil - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Snap peas - 1 cup
  • Broccoli florets - 1 cup
  • Bell peppers - 2, thinly sliced
  • Carrots - 2, thinly sliced
  • Cauliflower - 1 head, grated into rice-like texture

Instructions

  1. In a large skillet or wok, heat the sesame oil over medium heat.
  2. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the sliced carrots, bell peppers, broccoli florets, and snap peas to the skillet. Stir fry for 3-4 minutes until the vegetables are slightly tender.
  4. Push the vegetables to one side of the skillet and add the cauliflower rice to the other side. Cook for 2-3 minutes, stirring occasionally, until the cauliflower rice is heated through.
  5. Combine the vegetables and cauliflower rice in the skillet. Add soy sauce, salt, and pepper. Stir well to combine and cook for an additional 2 minutes.
  6. Remove from heat and garnish with sesame seeds and chopped green onions.
  7. Serve hot and enjoy!
