Vegetable Stir Fry

This vegetable stir fry is a quick and healthy dish packed with colorful vegetables and flavorful sauce.

Ingredients

  • Green onions - 2 stalks, sliced, for garnish
  • Sesame seeds - 1 tablespoon, for garnish
  • Salt and pepper - To taste
  • Water - 1/4 cup
  • Cornstarch - 1 tablespoon
  • Honey - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 3 tablespoons
  • Snap peas - 1 cup
  • Bell peppers - 2 medium, sliced
  • Carrots - 2 medium, sliced
  • Broccoli - 2 cups, florets
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Vegetable oil - 2 tablespoons

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the minced garlic and grated ginger, and cook for 1 minute until fragrant.
  3. Add the broccoli, carrots, bell peppers, and snap peas to the skillet. Stir fry for 3-4 minutes until the vegetables are crisp-tender.
  4. In a small bowl, whisk together the soy sauce, sesame oil, honey, cornstarch, water, salt, and pepper.
  5. Pour the sauce over the vegetables in the skillet and stir to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens.
  6. Remove from heat and garnish with sesame seeds and sliced green onions.
  7. Serve hot and enjoy!
