Cangrejos Enchilados

This dish is a spicy and flavorful way to enjoy crab. The crab is cooked in a tomato-based sauce with onions, garlic, and chili peppers.

Ingredients

  • Lime wedges - For serving
  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Cilantro - 1/4 cup, chopped
  • Jalapeno pepper - 1, seeded and chopped
  • Red bell pepper - 1, chopped
  • Green bell pepper - 1, chopped
  • Tomatoes - 2 large, chopped
  • Garlic - 4 cloves, minced
  • Onion - 1 large, chopped
  • Olive oil - 2 tablespoons
  • Crab - 2 lbs, cleaned and cracked

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the tomatoes, bell peppers, jalapeno pepper, cilantro, cumin, salt, and pepper. Cook for 10 minutes, stirring occasionally.
  4. Add the crab to the pot and stir to coat with the sauce.
  5. Cover the pot and simmer for 15-20 minutes, or until the crab is cooked through.
  6. Serve hot with lime wedges.
