Tomatican

Tomatican is a traditional Chilean dish made with tomatoes, onions, and beef.

Ingredients

  • Fresh cilantro - 1/4 cup, chopped
  • Cooked white rice - 3 cups
  • Water - 1 cup
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Green bell pepper - 1, diced
  • Red bell pepper - 1, diced
  • Tomatoes - 4 large, diced
  • Garlic - 3 cloves, minced
  • Onion - 1 large, chopped
  • Beef stew meat - 1.5 pounds, cubed

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
  4. Add the diced tomatoes, red bell pepper, green bell pepper, cumin, paprika, oregano, salt, and pepper. Stir to combine.
  5. Return the browned beef stew meat to the pot and add water. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the beef is tender.
  6. Serve the tomatican over cooked white rice and garnish with fresh cilantro.
