Tomatican is a traditional Chilean dish made with tomatoes, onions, and beef.
Ingredients
Fresh cilantro - 1/4 cup, chopped
Cooked white rice - 3 cups
Water - 1 cup
Olive oil - 2 tablespoons
Salt and pepper - To taste
Oregano - 1 teaspoon
Paprika - 1 teaspoon
Cumin - 1 teaspoon
Green bell pepper - 1, diced
Red bell pepper - 1, diced
Tomatoes - 4 large, diced
Garlic - 3 cloves, minced
Onion - 1 large, chopped
Beef stew meat - 1.5 pounds, cubed
Instructions
In a large pot, heat the olive oil over medium heat.
Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.
In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
Add the diced tomatoes, red bell pepper, green bell pepper, cumin, paprika, oregano, salt, and pepper. Stir to combine.
Return the browned beef stew meat to the pot and add water. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the beef is tender.
Serve the tomatican over cooked white rice and garnish with fresh cilantro.
