Ingredients

  • Parsley - 2 tablespoons, chopped (for garnish)
  • Salt and pepper - To taste
  • Fresh thyme - 1 teaspoon, chopped
  • Potatoes - 2 medium, peeled and diced
  • Heavy cream - 1 cup
  • Chicken broth - 4 cups
  • All - purpose flour - 1/4 cup
  • Garlic - 3 cloves, minced
  • Celery - 2 stalks, finely chopped
  • Onion - 1 medium, finely chopped
  • Butter - 4 tablespoons
  • Lobster - 2 pounds, cooked and meat removed

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion, celery, and minced garlic. Cook until the vegetables are soft and translucent, about 5 minutes.
  3. Sprinkle the flour over the vegetables and stir well to combine. Cook for an additional 2 minutes.
  4. Slowly pour in the chicken broth while stirring constantly to avoid lumps. Bring the mixture to a simmer.
  5. Add the diced potatoes and fresh thyme to the pot. Cook for about 15 minutes, or until the potatoes are tender.
  6. Stir in the heavy cream and cooked lobster meat. Season with salt and pepper to taste.
  7. Simmer the stew for another 10 minutes to allow the flavors to meld together.
  8. Serve the Boston Lobster Stew hot, garnished with chopped parsley.
