Halibut Chowder

This creamy and flavorful halibut chowder is made with fresh halibut fillets, potatoes, vegetables, and herbs.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Bay leaf - 1
  • Fresh thyme - 1 tablespoon, chopped
  • Milk - 2 cups
  • Chicken broth - 4 cups
  • All - purpose flour - 1/4 cup
  • Butter - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Celery - 2 stalks, diced
  • Carrots - 2 medium, diced
  • Onion - 1 medium, chopped
  • Potatoes - 2 large, diced
  • Halibut fillets - 1.5 lbs, cut into chunks

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
  3. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the chicken broth and milk.
  5. Add the potatoes, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are cooked through.
  6. Add the halibut chunks and simmer for an additional 5 minutes, or until the fish is cooked and flakes easily with a fork.
  7. Remove the bay leaf and stir in the fresh parsley.
  8. Serve hot and enjoy!
