Bok Choy and Tofu Soup

This healthy and flavorful soup combines bok choy, tofu, and a savory broth for a delicious and comforting meal.

Ingredients

  • Salt and pepper - To taste
  • Green onions - 2, sliced
  • Sesame oil - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Vegetable broth - 4 cups
  • Tofu - 1 cup, cubed
  • Bok choy - 4 cups, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Vegetable oil - 1 tablespoon

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the minced garlic and grated ginger, and cook for 1-2 minutes until fragrant.
  3. Add the chopped bok choy and cubed tofu to the pot, and sauté for 3-4 minutes until slightly softened.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and let simmer for 10 minutes.
  5. Stir in the soy sauce and sesame oil, and season with salt and pepper to taste.
  6. Garnish with sliced green onions before serving.
  7. Serve hot and enjoy!
