Bok Choy and Tofu Noodle Soup

This comforting and nutritious soup is packed with bok choy, tofu, and noodles in a flavorful broth.

Ingredients

  • Salt - To taste
  • Red pepper flakes - To taste
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Green onions - 2, sliced
  • Rice noodles - 8 ounces
  • Tofu - 8 ounces, cubed
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Vegetable broth - 4 cups
  • Bok choy - 4 cups, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Vegetable oil - 1 tablespoon

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add minced garlic and grated ginger, and cook for 1-2 minutes until fragrant.
  3. Add chopped bok choy and cook for 3-4 minutes until slightly wilted.
  4. Pour in vegetable broth and bring to a boil.
  5. Stir in soy sauce and sesame oil.
  6. Add tofu cubes and rice noodles to the pot.
  7. Cook for 5-7 minutes until the noodles are tender and the tofu is heated through.
  8. Remove from heat and stir in sliced green onions, lime juice, and chopped cilantro.
  9. Season with red pepper flakes and salt to taste.
  10. Serve hot and enjoy!
