Bok Choy and Shiitake Mushroom Soup

This flavorful soup combines the freshness of bok choy with the earthy taste of shiitake mushrooms.

Ingredients

  • Salt and pepper - To taste
  • Green onions - 2, thinly sliced
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Vegetable broth - 4 cups
  • Shiitake mushrooms - 8 ounces, sliced
  • Bok choy - 4 cups, chopped

Instructions

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the sliced shiitake mushrooms and cook for 3-4 minutes until they start to soften.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to low and simmer for 10 minutes.
  6. Add the chopped bok choy and cook for an additional 5 minutes until wilted.
  7. Stir in the soy sauce and season with salt and pepper to taste.
  8. Serve hot, garnished with sliced green onions.
