Bok Choy and Carrot Noodle Soup

This healthy and flavorful soup is made with bok choy, carrots, and noodles in a savory broth.

Ingredients

  • Salt and pepper - To taste
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Green onions - 2, sliced
  • Rice noodles - 4 ounces
  • Soy sauce - 2 tablespoons
  • Vegetable broth - 4 cups
  • Carrots - 2, julienned
  • Bok choy - 4 cups, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Vegetable oil - 1 tablespoon

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the garlic and ginger and cook for 1 minute, until fragrant.
  3. Add the bok choy and carrots and cook for 3-4 minutes, until slightly softened.
  4. Pour in the vegetable broth and soy sauce. Bring to a boil.
  5. Add the rice noodles and cook according to package instructions.
  6. Stir in the green onions, lime juice, and cilantro. Season with salt and pepper to taste.
