Bok Choy and Tofu Curry

This flavorful curry combines bok choy and tofu in a rich and aromatic sauce.

Ingredients

  • Fresh cilantro - For garnish
  • Salt - To taste
  • Vegetable oil - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Red curry paste - 2 tablespoons
  • Coconut milk - 1 can (400ml)
  • Firm tofu - 1 block, cubed
  • Bok choy - 4 heads, chopped

Instructions

  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  3. Add red curry paste and stir-fry for another minute.
  4. Add cubed tofu and cook until lightly browned on all sides.
  5. Add chopped bok choy and stir-fry for 2-3 minutes until wilted.
  6. Pour in coconut milk, soy sauce, lime juice, and brown sugar. Stir well to combine.
  7. Reduce heat to low and simmer for 10 minutes, allowing the flavors to meld together.
  8. Season with salt to taste.
  9. Serve the curry over steamed rice or noodles.
  10. Garnish with fresh cilantro before serving.
