Bok Choy and Shrimp Curry

This flavorful curry combines tender bok choy and succulent shrimp in a rich and aromatic sauce.

Ingredients

  • Cilantro - For garnish
  • Salt - To taste
  • Vegetable oil - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Red curry paste - 2 tablespoons
  • Coconut milk - 1 can (14 oz)
  • Shrimp - 1 pound, peeled and deveined
  • Bok choy - 4 heads, chopped

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. Add red curry paste and cook for another minute.
  4. Add bok choy and cook for 3-4 minutes until slightly wilted.
  5. Push the bok choy to one side of the pan and add shrimp to the other side.
  6. Cook shrimp for 2-3 minutes per side until pink and cooked through.
  7. Pour in coconut milk, fish sauce, brown sugar, and lime juice. Stir well to combine.
  8. Simmer for 5 minutes, allowing the flavors to meld together.
  9. Season with salt to taste.
  10. Serve the curry over steamed rice or noodles.
  11. Garnish with fresh cilantro before serving.
