Bok Choy and Mushroom Soup

Ingredients

  • Salt and pepper - To taste
  • Green onions - 2, sliced
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Vegetable broth - 4 cups
  • Mushrooms - 8 ounces, sliced
  • Bok choy - 4 cups, chopped

Instructions

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the mushrooms and cook for 3-4 minutes until they start to soften.
  4. Add the bok choy and cook for another 2-3 minutes until wilted.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat to low and simmer for 10 minutes to allow the flavors to meld together.
  7. Stir in the soy sauce and season with salt and pepper to taste.
  8. Serve hot, garnished with sliced green onions.
