Bok Choy and Red Pepper Soup

This flavorful soup combines bok choy, red peppers, and aromatic spices for a delicious and healthy meal.

Ingredients

  • Salt and pepper - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Vegetable broth - 4 cups
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1, chopped
  • Red bell pepper - 1, diced
  • Bok choy - 4 cups, chopped

Instructions

  1. Heat sesame oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant, about 2 minutes.
  3. Add red bell pepper and bok choy. Cook for another 3-4 minutes, until vegetables are slightly tender.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Stir in soy sauce, red pepper flakes, salt, and pepper. Cook for an additional 2 minutes.
  6. Remove from heat and let the soup cool slightly.
  7. Using an immersion blender or regular blender, blend the soup until smooth.
  8. Return the soup to the pot and heat over low heat until warmed through.
  9. Serve hot and garnish with additional chopped bok choy or red pepper flakes, if desired.
