Bok Choy and Broccoli Soup

This healthy and flavorful soup combines the goodness of bok choy and broccoli with aromatic spices.

Ingredients

  • Cilantro - For garnish
  • Salt and pepper - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Coconut milk - 1 cup
  • Vegetable broth - 4 cups
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Broccoli - 2 cups, florets
  • Bok choy - 4 cups, chopped

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and onions are translucent.
  3. Add the bok choy and broccoli florets to the pot. Cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  5. Using an immersion blender or regular blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in the coconut milk, soy sauce, lime juice, red pepper flakes, salt, and pepper. Heat through.
  7. Serve hot, garnished with fresh cilantro leaves.
