Bok Choy and Carrot Soup

This healthy and flavorful soup combines the freshness of bok choy and the sweetness of carrots.

Ingredients

  • Cilantro - For garnish
  • Salt and pepper - To taste
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Coconut milk - 1 cup
  • Vegetable broth - 4 cups
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Carrots - 2 cups, sliced
  • Bok choy - 4 cups, chopped

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the onion, garlic, and ginger. Sauté until fragrant and the onion is translucent.
  3. Add the bok choy and carrots. Cook for a few minutes until slightly softened.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.
  5. Using an immersion blender or regular blender, puree the soup until smooth.
  6. Stir in the coconut milk, soy sauce, and lime juice. Season with salt and pepper to taste.
  7. Simmer for an additional 5 minutes to allow the flavors to meld together.
  8. Serve hot, garnished with fresh cilantro.
