Blueberry Pancake Burrito

This delicious blueberry pancake burrito combines the flavors of fluffy pancakes and sweet blueberries, wrapped in a warm tortilla.

Ingredients

  • Butter - 2 tablespoons
  • Maple syrup - 2 tablespoons
  • Flour tortillas - 2
  • Blueberries - 1 cup
  • Egg - 1
  • Milk - 3/4 cup
  • Pancake mix - 1 cup

Instructions

  1. In a mixing bowl, combine the pancake mix, milk, and egg. Stir until well combined.
  2. Gently fold in the blueberries into the pancake batter.
  3. Heat a non-stick skillet over medium heat and melt a tablespoon of butter.
  4. Pour 1/4 cup of the pancake batter onto the skillet to form a small pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with the remaining batter.
  5. Warm the flour tortillas in a separate skillet or microwave.
  6. Place a pancake on each tortilla and drizzle with maple syrup.
  7. Roll up the tortilla, tucking in the sides as you go, to form a burrito.
  8. Serve warm and enjoy!
