Banana Nut Muffins

These delicious banana nut muffins are moist, flavorful, and packed with crunchy nuts.

Ingredients

  • Chopped walnuts - 1/2 cup
  • Vanilla extract - 1 teaspoon
  • Egg - 1
  • Brown sugar - 1/2 cup
  • Granulated sugar - 1/2 cup
  • Unsalted butter - 1/2 cup, melted
  • Ripe bananas - 3, mashed
  • Salt - 1/4 teaspoon
  • Baking soda - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 2 cups

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the mashed bananas, melted butter, granulated sugar, brown sugar, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped walnuts.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
