Banana Muffin Tops

These delicious banana muffin tops are a perfect grab-and-go breakfast or snack.

Ingredients

  • Chocolate chips - 1/2 cup
  • Chopped walnuts - 1/2 cup
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Baking soda - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 1 1/2 cups
  • Vanilla extract - 1 teaspoon
  • Egg - 1
  • Granulated sugar - 1/2 cup
  • Unsalted butter - 1/2 cup, melted
  • Ripe bananas - 2

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork.
  3. Add the melted butter, granulated sugar, egg, and vanilla extract to the mashed bananas. Mix well.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  6. Fold in the chopped walnuts and chocolate chips.
  7. Drop spoonfuls of the batter onto the prepared baking sheet, forming muffin tops.
  8. Bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  9. Allow the muffin tops to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
