Ingredients

  • Parsley - A handful, chopped
  • Salt and pepper - To taste
  • Mixed fish - 1 kg, cut into chunks
  • Potatoes - 4, cut into chunks
  • White wine - 1 cup
  • Fish stock - 1 litre
  • Tomatoes - 4, peeled and chopped
  • Garlic - 4 cloves, minced
  • Onions - 2, finely chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook until soft and golden.
  3. Add the tomatoes and cook until they break down and form a sauce.
  4. Pour in the fish stock and white wine, then add the potatoes.
  5. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
  6. Add the fish and cook until it is cooked through and flakes easily with a fork.
  7. Season with salt and pepper, then stir in the chopped parsley.
  8. Serve the stew hot, with crusty bread on the side to mop up the delicious sauce.
